How to Enter the Codes
From the main menu choose Extras, then Gusteau's Shop, then Secrets, and select a "Code [number]" entry to enter the code. After unlocking it, click its name to turn it on. Some codes can only be unlocked by buying them with the Gusteau points found in Story mode.
